Varietal composition: 100% Sauvignons Blanc This beautiful Sauvignon Blanc spent a month in neutral oak followed by just over five months in stainless steel. It is a refreshing wine with a pale straw color and a bouquet of honeydew, cantaloupe, and lime zest. On the palate, it features citrus aromatics and a slight richness, with flavors of lemon zest, mineral tones, and a hint of creamy texture. The wine is noted for its bright acidity and a crisp finish, making it enjoyable by itself or with food. |

Varietal composition: 100% Chardonnay The wine is a beautiful light gold color. The aromatics are intensely floral with peach blossoms, jasmine and honeysuckle. There is also a lemon custard and fresh rain element. The wine is lightly mouthfilling, with more lemon and grapefruit citrus around fresh pear. The acidity is bright and fresh, cleansing the palate. This wine is meant to be drank in its youth but will develop nicely over the next 5-7 years. |

Tart Flambe Confit Duck with Chevre, Heirloom Tomato, Creme Fraiche and Fig Balsamic
Varietal composition: 100% Cabernet Sauvignon The Spring Street Cabernet Sauvignon is fully purple in the core with light purple on the rim. Deep raspberry tart and pomegranate concentrate fill the glass. Underpinning elements of crushed violets and charred cedar are also apparent. The wine has a wonderful viscosity to the palate, where wonderful flavors of cola, black licorice and black cherries emerge. The tannins are present but not overbearing, while soft acidity eventually appears. This is a great representation of bring together two small family vineyards to make one great wine that should age nicely over the next 10-11 years. |

Grassfed Beef Tenderloin with Sweet Potato Puree, Baby Broccoli, Parsnip and Clove Au Jus
Varietal composition: 100% Cabernet Sauvignon The nose takes a moment to show itself, then cassis and blueberry pie followed by caramel, cocoa and volcanic earth all jump from the glass. The initial palate is soft and plush and then the tannins start to build. Firm mountain acidity helps attenuate the sizeable chalky tannins. The flavors on the palate move to black currant, cedar box and vanilla bean. This big, stunning wine needs time in bottle to reach its pinnacle. |

Caramel Flan with Peanut Brittle and Vanilla Bean Whipped Cream
Varietal Composition: 100% Chardonnay Evelyne is crafted in the traditional Méthode Champenoise method. This Brut Reserve is a cool climate sparkling wine with bright and crisp aromas of apple, pear and lemon with the subtle complexities of vanilla, and biscuit, toasty layers. It features nice concentration and a dry, refreshing finish that lingers on the palate. Great as an aperitif or pair with caviar, cured meats, and goat or gouda cheeses. |

Varietal Composition: 100% Cabernet Sauvignon The 2021 Jack’s Vineyard Cabernet exhibits a full purple core and aromas are immediate upon pulling the cork. Black raspberry and fresh ground coffee fill the glass, followed by the quintessential cocoa and truffle of Howell Mountain. The wine is extremely round and plush on the palate with blackberry and ripe plums taking the lead matched by eucalyptus and vanillin. The tannins are firm but chalky, with great acidity to match. The 2021is a great example of a single-vineyard site (single-acre) on Howell Mountain during perfect growing conditions and should age wonderfully over the next 12-15 years. |
